Nutrition Pack for kids – Mixed Veg Dal Khichdi
Khichdi is an Indian dish with a combination of lentil and rice that is easy to digest and wholesome. Done right, it can be incredibly tasty and may become your favorite comfort food. This version can be made in a traditional pressure cooker or an Instant Pot. For kids, it’s a complete nutrition pack filled with proteins and carbs infused with ghee and loads of veggies
Khichdi is also a great meal especially when you are tired, having a runny nose and just need something to soothe your throat.
So here’s the recipe for the mouthwatering dish which can be made with both Tur dal and Moong Dal. But my favorite is moong dal as its lighter for the tummy:-
Rice – 1 cup
Moon dal – 1/2 cup
Turmeric – 1 /2 tbsp
Veggies- Carrot, Beans, peas, Cabbage, Lauki, Red pumpkin, potato etc.. you can pick your choice of veggies.
Salt to taste
Jeera – 1 /2 tbsp
1 stick of Cinnamon
Water – 3 cups
- Wash the rice and the dal (lentils) well, and soak them in enough water to cover them for at least 30 minutes
- Heat ghee in the pressure cooker and add cumin seeds, and 1 stick of Cinnamon
- Drain all the water from the rice and lentils and add them to the cooker. Dry roast them for 4-5 minutes, till you get a nice aroma.
- Add the veggies, turmeric, salt, and water to the cooker and add 3 cups of water and pressure cook for 6-7 whistles and keep in sim for 2 to 3 minutes for a nice creamy texture. Let the pressure get released naturally Once all the pressure has released, open the pressure cooker and mix well. Serve in a bowl and check for salt, and serve hot with ghee.
